Se determinaron el deterioro fisiologico y microbiologico poscosecha, asi como la composicion quimica, de las raices de yuca cv. Engana Ladrao, IAC-12829, Guaxupe, Iracema, Branca de Santa Catarina, Mantiqueira y Sonora, las cuales se almacenaron durante 14 dias en bolsas plasticas a temp. ambiente. Se clasificaron como resistentes al deterioro fisiologico (DF) los cv. Mantiqueira, Sonora, Branca de Santa Catarina y Guaxupe; IAC-12829, Engana Ladrao e Iracema se clasificaron como susceptibles. Las raices de los cv. resistentes al DF, en comparacion con las de los cv. susceptibles, presentaron mayores contenidos de humedad, de azucares reductores, no reductores y totales, asi como de compuestos fenolicos totales y de sus formas monomericas. Engana Ladrao fue el cv. mas resis-tente al deterioro microbiologico (DM), en tanto que Branca de Santa Catarina, Iracema e IAC-12829 presentaron un grado intermedio de resistencia al DM. Guaxupe y Mantiqueira fueron los mas susceptibles. Se asociaron con el DM los hongos del genero Verticillium, Fusarium, Aspergillus, Penicillium y Phytophthora. El ataque fungico comenzo 8 dias despues de la cosecha y aumento hasta alcanzar un pico en el dia 14. Los contenidos de humedad y de azucares reductores, no reductores y totales (expresados en base seca y humeda), presentaron correlaciones significativamente positivas con los diversos grados de DM. Las caracteristicas de los cv. indican que el DF y el DM son 2 procesos separados, lo cual no impide que puedan ocurrir simultaneamente en un mismo cv. (RA-CIAT) |

The physiological and microbiological postharvest deterioration and the chemical composition of roots of cassava cv. Engana Ladrao, IAC-12829, Guaxupe, Iracema, Branca de Santa Catarina, Mantiqueira, and Sonora, stored during 14 days in plastic bags at root temp., were determined. Cv. Mantiqueira, Sonora, Branca de Santa Catarina, and Guaxupe were classified as resistant to physiological deterioration (PD), and IAC-12829, Engana Ladrao, and Iracema as susceptible to PD. Roots of PD-resistant cv., compared with those of PD-susceptible cv., presented higher reducing, nonreducing, and total sugars, total phenolic compounds and their monomeric forms. Cv. Engana Ladrao was the most resistant to microbiological deterioration (MD); whereas Branca de Santa Catarina, Iracema, and IAC-12829 presented an intermediate degree of resistance to MD; Guaxupe and Mantiqueira were the most susceptible. Fungi of the genera Verticillium, Fusarium, Aspergillus, Penicillium, and Phytophthora were associated with MD. Fungi attack started on day 8 after harvesting and increased until it reached a peak on day 14. MC and reducing, nonreducing, and total sugar contents (expressedon dry and wet base) presented significant positive correlations with the several degrees of MD. Cv. characteristics indicated that PD and MD are separate processes, but this does not impede their simultaneous occurrence in the same cv. (AS) |
