Raices de yuca cv. Mantiqueira se empacaron en bolsas de polietileno o en aserrin humedo despues de sumergirlas durante 5 min en soluciones que contenian 0.60 por ciento de maneb, 0.25 por ciento de acido ascorbico o agua (testigo) para determinar el efecto de estos tratamientos en los contenidos de humedad, almidon y azucar de las raices. El contenido de azucares totales y el de azucares reductores en las raices aumentaron durante el periodo de almacenamiento; sin embargo, los aumentos en los azucares totales no se correlacionaron con las disminuciones en el contenido de almidon. No hubo correlacion significativa entre el contenido de humedad y los dias despues de la cosecha. El contenido de almidon disminuyo cuando las raices se empacaron en bolsas de polietileno con 0.25 por ciento de acido ascorbico, en aserrin humedo con 0.60 por ciento de maneb y en el testigo. Roots of cassava cv. Mantiqueira were packed in polyethylene bags and moist sawdust after immersion for 5 min in solutions containing 0.60 percent maneb, 0.25 percent ascorbic acid, or water (check), to determine their effect on root moisture, starch, and sugar contents. Total and reducing sugars contents increased during the storage period. Total sugars increases, however, were not correlated with starch decreases. No significant correlation was observed between MC and days after harvest. Starch contents decreased when roots were packed in polyethylene bags plus 0.25 percent ascorbic acid, in moist sawdust plus 0.60 percent maneb, and in the check. (AS) |
