Summary, etc Se evaluo la calidad nutritiva de las mezclas proteinicas de soya texturizada y frijol rojo precocido en diferentes combinaciones (80:20, 60:40, 40:60 y 20:80) en comparacion con soya texturizada y frijol rojo precocido tomados por separado, en un ensayo biologico utilizando ratas albino machos de 21 dias de edad. Tambien se estudiaron los efectos de la adicion de 0.2 por ciento de met. El criterio seleccionado para la evaluacion fue el de RPN. Se utilizo un diseno exptl. completamente al azar. Los productos tambien se evaluaron sensorialmente. La adicion de cantidades crecientes de soya al frijol incremento gradualmente el nivel de proteina en la mezcla. Entre las mezclas no suplementadas, se obtuvo una mejor calidad de la proteina con el 20 por ciento de la proteina del frijol rojo y el 80 por ciento de la soya, la cual correspondio a 37 y 63 g de frijol y soya, resp. La suplementacion con met. mejoro la calidad de las mezclas. La mezcla de 60 por ciento de frijol rojo precocido y 40 por ciento de soya texturizada suplementada con 0.2 por ciento de met. se considero como la mejor combinacion ya que tenia buena aceptabilidad y alta calidad proteinica. Summary, etc Nutritional quality of protein mixtures from texturized soybeans and precooked red beans at different levels of combinations (80:20, 60:40, 40:60, and 20:80), compared with texturized soybean and precooked red beans taken separately, was evaluated in a biological assay using male albino rats, 21 days old. The effects of the addition of 0.2 percent met. were also studied. The criterion selected for evaluation was the NPR. A completely randomized exptl. design was used. The products were also sensory evaluated. The addition of increasing amounts of soybean to bean gradually increased the level of protein in the mixture. Among the nonsupplemented mixtures, a better protein quality was obtained with 20 percent of the protein from red beans and 80 percent from soybeans, which corresponded to 37 and 63 g of bean and soybean, resp. Supplementation with met. improved the quality of the mixtures. The mixture of 60 percent precooked red beans and 40 percent texturized soybean supplemented with 0.2 percent met. was found to be the best combination since it had good acceptability and high protein quality.
