Se determinaron las mejores epocas de cosecha para las var. de yuca disponibles en Minas Gerais, Brasil y los cv. de mejor rendimiento industrial en condiciones de campo de Lavras con los cv. Sonora, Branca de Santa Catarina, Broto Roxo, Hibrida, Guaxupe, Sabara, IAC 1418, Baiana y Vassourinha (Sel 514). Se cosecho a los 12, 16, 20 y 24 meses y se determinaron los contenidos de humedad, almidon, ceniza, proteina, compuestos fenolicos totales, Ca, P, N, K, B, Mg y Zn de 3 kg de raices de cada var. Los resultados se presentan en cuadros. Con base en el beneficio economico y el contenido de almidon se estipulan las siguientes fechas de cosecha: 12 meses (Vassourinha); 16 meses (Hibrida, Guaxupe, IAC 1418, Broto Roxo, Branca de Santa Catarina y Sonora); 20 meses (Hibrida y Sabara) y 24 meses (IAC 1418, Broto Roxo y Sonora). The best harvesting dates for the var. grown in Minas Gerais, Brazil, and the cv. with the highest industrial yield were determined under field conditions in Lavras using cv. Sonora, Branca de Santa Catarina, Broto Roxo, Hibrida, Guaxupe, Sabara, IAC 1418, Baiana, and Vassourinha (Sel 514). Harvesting took place at 12, 16, 20, and 24 mo. and MC, starch, ash, protein, total phenolic compound, Ca, P, N, K, B, Mg, and Zn contents of 3 kg of roots of each var. were determined. Results are given in table form. The following harvesting dates were determined on the basis of economic profit and starch content: 12 mo. (Vassourinha), 16 mo. (Hibrida, Guaxupe, IAC 1418, Broto Roxo, Branca de Santa Catarina, and Sonora), 20 mo. (Hibrida and Sabara), and 24 mo. (IAC 1418, Broto Roxo, and Sonora). Cv.
