El almacenamiento de la yuca a largo plazo depende de la reduccion de su contenido de humedad cuando esta fresca (60-70 por ciento) a menos del 14 por ciento. Para esto se seca la yuca naturalmente al sol, o artificialmente con secadores de aire caliente. Este ultimo sistema tiene la ventaja de que puede controlarse facilmente, para obtener un producto de calidad uniforme. Los parametros que se deben tener en cuenta para el proceso de secamiento son el contenido de humedad de la yuca, el tamano de los trozos, la temp., la HR y la velocidad del viento. La calidad de la yuca seca aumenta si se lavan las raices antes de pelarlas; la humedad luego se extrae por compresion mecanica. Se describen los metodos de secamiento en pisos de cemento o en bandejas. Se comparan economicamente los 2 metodos en un cuadro y se indican las especificaciones (humedad, contenido de almidon, ceniza total y fibra cruda) que se requieren en Asia y Africa. Se incluyen fotografias de las tajadoras, palas y rastrillos utilizados para extender o recoger la yuca, asi como de una bandeja secadora. (RA-CIAT)
Long-term storage of cassava depends upon the reduction of its MC when fresh (60-70 percent) to less than 14 percent. For this purpose the cassava is dried either naturally in the sun or artificially in hot-air driers. The latter system has the advantage that it can be easily controlled in order to obtain a product of uniform quality. The parameters of the drying process to be taken into account are the MC of cassava, chip size, temp., RH, and wind velocity. The quality of the dried cassava increases if the roots are washed before peeling them; the moisture is then extracted by mechanical comprension. The methods of drying on cement and on trays are described; an economic comparison is made in table form of the 2 methods and the range of specifications (moisture, starch content, total ash, and crude fiber) that are required in Asia and Africa is indicated. Photographs are also included of chippers, rakes, and shovels used to spread and collect the cassava, and a tray drier. (CIAT)
