Se determino el contenido de almidon en las raices de yuca cv. Mantiqueira, Riqueza y Branca de Santa Catarina, cosechados a los 9, 12, 15 y 18 meses de la siembra, mediante el metodo fisico de la balanza hidrostatica y con 2 metodos quimicos de extraccion por hidrolisis acida: titulometrico de Fehling y colorimetrico de Somogyi-Nelson. Se encontraron correlaciones significativas entre estos 2 metodos; sin embargo, las correlaciones de los datos del almidon segun la balanza hidrostatica y los metodos de Fehling y Somogyi-Nelson no fueron significativos. Root starch content of cassava cv. Mantiqueira, Riqueza, and Branca de Santa Catarina, harvested 9, 12, 15, and 18 mo. after planting, was determined by the physical method of hydrostatic balance and 2 chemical methods using acid hydrolysis extraction: titrimetrically (Fehling solution) and by colorimetry (Somogyi- Nelson method). There were significant correlations between these 2 methods; however, the correlations between hydrostatic balance and Fehling and Somogyi-Nelson starch data were not significant.
