Effect of extrusion variables on cassava extrudates

La HY se sometio a un proceso de extrusion mediante la variacion de los parametros de humedad, temp., velocidad del tornillo y tasa de suministro. Se investigo el significado de cada variable y las interacciones entre variables para cada caracteristica del material extrudido. La expansion optima (2.82) se obtuvo con 11 por ciento de humedad, 120-125 grados C, una velocidad del tornillo de 520 rpm y una tasa de suministro de 250 g/min. El efecto de la humedad de la harina fue mas significativo en relacion con la expansion, la densidad volumetrica y la humedad del material extrudido. El aumento de la temp. aumento la expansion y la solubilidad en agua, pero disminuyo la densidad volumetrica, la humedad del material extrudido y la absorcion de agua. La velocidad del tornillo fue lo que mas influyo la absorcion de agua y la solubilidad en agua. La humedad del material extrudido se correlaciono negativamente (P menor que 0.01) con su expansion. El indice de solubilidad en agua del material extrudido se correlaciono negativamente (P menor que 0.05) con la humedad y el indice de absorcion de agua del material extrudido pero se correlaciono positivamente (P menor que 0.05) con la expansion. Cassava flour was extruded by varying parameters of feed moisture; temperature; screw speed and feed rate. We investigated significance of each variable and interactions between variables on each extrudate characteristic. Optimum expansion (2.82) was at 11 percent feed moisture; 120-125 degrees C; screw speed, 520 rpm; feed rate, 250 g/min. Effect of feed moisture was most significant on expansion, bulk density and extrudate moisture. Increasing temperature, increased expansion and water solubility, but decreased bulk density, extrudate moisture and water absorption. Screw speed most influenced water absorption and solubility. Extrudate moisture correlated negatively (P less than 0.01) with extrudate expansion.
