Se determinaron las afinidades relativas de taninos condensados purificados del sorgo, frijol pinto, Shinopsis lorentzii y Acacia mearnsii para 6 proteinas diferentes mediante un ensayo de enlace competitivo. Se encontro que los taninos del frijol pinto eran procianidinas y que la longitud de las cadenas era mas corta y hubo menos precipitacion de albumina del suero bovino que el tanino del sorgo. El frijol pinto presento mayor afinidad que los demas para el inhibidor de tripsina de la soya. Los resultados indican que las interacciones tanino/proteina pueden ser especificas para los distintos taninos al igual que para las distintas proteinas. The relative affinities of condensed tannins purified from sorghum, pinto bean, Shinopsis lorentzii, and Acacia mearnsii for 6 dissimilar proteins were determined by a competitive binding assay. Pinto bean tannins were found to be procyanidins and have shorter chain lengths and precipitate less bovine serum albumin than sorghum tannin. Pinto bean had higher affinity than the others for soybean trypsin inhibitor. The results indicate that tannin/protein interactions may be specific for different tannins as well as for different proteins.
