Se cortaron raices de varios tamanos en pedazos de 0.5 cm de grosor con diametros que variaron de 2.5-6 cm. Se hicieron curvas tipicas de perdida de agua como una funcion del diametro de los pedazos y la superficie especifica para cada una de las var. en estas condiciones exptl. Las tasas de secamiento mostraron diferencias significativas entre las var. El contenido de almidon permanecio casi constante despues de cada tratamiento, como se indico por los analisis quimico y microscopico. Estos resultados son de interes en la aplicacion de las tecnicas de secamiento para la preservacion de la yuca durante el almacenamiento y el manejo en las fabricas de produccion de alcohol. Typical curves of water loss as a function of slice diameter and specific surface were made for each var. under these exptl. conditions. Drying rates showed significant differences among var. The starch content remained almost the same after each treatment, as indicated by chemical and microscopic analyses. These results are of interest in the application of drying techniques for cassava preservation during handling and storage at alcohol production plants. (AS)
