Se describe la metodologia empleada para caracterizar las proteinas de semilla de frijol var. N203, U.I. 111 y U.I. 74. Los resultados de estos estudios senalan las posibilidades y limitaciones involucradas en la planeacion de programas de mejoramiento de la calidad nutricional de leguminosas de grano, los cuales comprenden 1) un metodo confiable, sencillo y economico para analizar la proteina de la semilla en el que no influyan fuentes de N no proteinico, 2) determinar si las proteinas de la semilla son componentes de los granos de aleurona y 3) confirmar la existencia de mas de 1 inhibidor de tripsina. El conocimiento de los tipos de proteina de la semilla de frijol y de sus caracteristicas nutricionales podrian ser la base de un sistema de seleccion muy exacto. (CIAT) |

The methodology used to characterize seed proteins in bean var. N203, U.I. 111, and U.I. 74 is described. Results of these studies indicate the possibilities and limitations involved in the planning of breeding programs for nutritional quality of grain legumes, which entail (1) a simple, reliable, and economic method to analyze seed protein, in which non protein N sources are involved, (2) determine if seed proteins are components of aleurone grains, and (3) confirm the existence of more than one trypsin inhibitor. Knowledge of bean seed protein types and their nutritional characteristics could be the basis of a very precise selection system. (CIAT) |
