In: In: Milner, Max (ed.). Nutritional improvement of food legumes by breeding: Proceedings of a symposium, held at the Food and Agriculture Organization of the United Nations, Rome, Italy, 3-5 Juy 1972 and PAG Statement 22Summary: Se describe la metodologia empleada para caracterizar las proteinas de semilla de frijol var. N203, U.I. 111 y U.I. 74. (CIAT)Summary: The methodology used to characterize seed proteins in bean var. N203, U.I. 111, and U.I. 74 is described. Results of these studies indicate the possibilities and limitations involved in the planning of breeding programs for nutritional quality of grain legumes, which entail (1) a simple, reliable, and economic method to analyze seed protein, in which non protein N sources are involved, (2) determine if seed proteins are components of aleurone grains, and (3) confirm the existence of more than one trypsin inhibitor. Knowledge of bean seed protein types and their nutritional characteristics could be the basis of a very precise selection system. (CIAT)
